What you'll learn:

1. Tunisian pastry

Classics and regional specialties: hlou arbi, zemni, sfaxi, baklawa, bjaweyet, kaak, stuffed dates, mignardises and more.

2. European pastry

The great classics (strawberry, opera, mille-feuille), modern entremets, layer cakes, 3D cakes and commercial productions.

3. Salé - Modern evening & innovative items

You'll learn to make a variety of modern savory items, ideal for buffets and parties: mini-bouchées, tartelettes, creative puff pastries, stuffed breads... Particular attention will be paid to innovation and presentation of items to meet current trends in catering and events.

4. Macaroons

Learn how to use the shells, various fillings, colors, storage and tips for successful macaroons.

5. Viennese pastries

Croissants, pains au chocolat, brioches, pains aux raisins, chaussons... all the know-how of puff pastry and yeast dough.

6. Cookies & petits fours

Shortbread, cookies... a variety of shapes, textures and tastes for your gourmet coffees.

7. Travel cakes

Sustainable, tasty and versatile recipes: marble cake, lemon cake, chocolate cake, dried fruit cake or candied fruit cake.

At the end of the training, you will be able to :
